Sailor Jack Spice Cups


Sailor Jack Spice Cups
1 stick butter, room temperature
1 cup packed dark brown sugar
2 eggs
1/2 cup sour cream
1/2 cup buttermilk
1/2 cup molasses
1/2 cup cocoa
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
2 Tbsp. cinnamon
1 Tbsp. cloves
1/2 tsp. nutmeg
2 tsp. allspice
1 tsp. ginger
1/8 tsp. pepper
2 cups flour
1 cup hot water
1 1/2 cups raisins

Glaze
4 cups powdered sugar
2 tsp. vanilla extract
1/4 to 1/3 cups water

1. Heat oven to 350 degrees. Grease and flour muffin pans.

2. Cream butter and brown sugar.
Add eggs, sour cream, buttermilk and molasses. Mix well.

3. Whisk together all the dry ingredients. (From the cocoa on down to the flour,)
Add to the wet ingredients. Mix just to combine.

4. Add the hot water. Mix until smooth.
Fold in the raisins.

5. Fill muffin cups 3/4th's full.
Bake 25 to 30 minutes. Toothpick will come out clean.
Cool in pans 10 minutes. Transfer cupcakes to a rack.

6. Make the glaze: Mix all the ingredients together.
Drizzle glaze over cooled cupcakes.

*These are very spicy, but nice and moist.
