Buffalo Chip Cookies
2 cups butter, room temperature
2 cups packed brown sugar
2 cups white sugar
4 eggs
2 tsp. vanilla extract
4 cups flour
2 tsp. baking soda
2 tsp. baking powder
2 cups oatmeal
2 cups crushed corn flakes
12 oz. chocolate chips
12 oz. butterscotch chips
1 cup chopped nuts
1 1/2 cups coconut
12 oz. mini M & M's
1. Heat the oven to 325 degrees. Grease or line cookie sheets with parchment paper.
2. In bowl, whisk together the flour, basking soda, baking powder and oatmeal.
3. With mixer, cream butter and both sugars.
Add in the eggs and vanilla.
On low, add the dry ingredients. Mix just to incorporate.
4. By hand, mix in the remaining ingredients with a wooden spoon. Do them one at a time.
5. Drop by 1/4 cups scoops onto the cookie sheets. Make sure they're at least 2 inches apart.
Bake for 20 minutes. Don't overbake them!
Cool on the pans for 10 minutes. Transfer to a rack.
