Louisiana Crunch Cake

Cake
4 eggs
1/2 cups butter, melted
1 cup milk
1 package yellow cake mix
2 Tbsp. coconut

Topping
2 Tbsp. coconut
butter - for greasing

Glaze
2 cups powdered sugar
4 Tbsp. butter, melted
4 Tbsp. milk
1/2 tsp. vanilla extract
1/2 tsp. lemon extract

1. Heat the oven to 350 degrees. Grease the tube or Bundt pan with the Topping butter. Sprinkle on the coconut.

2. Mix all the cake ingredients. Pour into the pan. 
Bake for 40 to 45 minutes. Toothpick will come out clean.
Cool in the pan for 10 minutes. Turn onto a serving plate.
Cool completely.

3. Mix the Glaze ingredients. Drizzle over the cooled cake.
Sprinkle on more coconut.

Serves 12.
