Hummus
2 (15 oz) cans chickpeas, drained & rinsed
3 - 4 Tbsp olive oil
4 Tbsp lemon juice
3 T. minced garlic
4 Tbsp cold water
1/4 tsp. pepper
1/2 tsp. salt
1/2 tsp. cumin
1/2 tsp. paprika
3 Tbsp finely minced onion
4 Tbsp. sour cream
1. In the blender, put the chickpeas, lemon juice, garlic, onion and olive oil. Puree.
Add water slowly, blending until it's smooth.
Scrape the sides when needed.
2. Add the seasonings. Puree.
Blend in sour cream. Refrigerate.
