Jamaican Jungle Bread

1 1/2 cups flour
1 cup oatmeal
1/2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 cups coconut
1/2 cups chopped nuts
3 bananas, mashed
1 (8 oz) can crushed pineapple, undrained
1/4 cup vegetable oil
2 eggs

1. Heat the oven to 350 degrees. Grease a 9 x 5 loaf pan.

2. In a large bowl, mix the flour, oatmeal, sugar, baking powder, baking soda, cinnamon, salt, coconut and nuts.

3. In a smaller bowl, mix the bananas, pineapple, oil and eggs.
Add to the dry ingredients. Stir just to combine.

4. Pour into the pan. Bake for 50 minutes. Toothpick comes out clean.
Cool in pan for 5 minutes. Turn onto a rack to cool completely.

Jumbo Muffins
Fill the Texas-size muffin pans 3/4th's full.
Bake at 350 degrees for 25 to 30 minutes.
