Ham Tetrazzini


Ham Tetrazzini

5 Tbsp. butter
1/2 lb. mushrooms, chopped
1/2 cups chopped onion
1/4 cups flour
2 cups chicken broth
1 1/4 cups milk or cream
1 cup Cheddar
1 tsp salt
1/8 tsp. pepper
1 tsp. lemon juice
8 oz. spaghetti, cooked and drained.
3 cups cubed ham
4 oz. chopped pimientos

1. Melt the butter. Saute the onions and mushrooms.
Whisk in the flour. Cook for 2 minutes.
Add the broth and milk. Cook until thickened.

2. Add cheese, salt, pepper and lemon juice. Lower the heat. Simmer, uncovered for 10 to 15 minutes.
Add ham and pimientos.

3. Mix the sauce with the spaghetti. Heat. Serve.
