Irish Soda Bread

Irish Soda Bread

4 cups flour
1 Tbsp. baking powder
1 tsp. salt
3/4 tsp. baking soda
1/4 cups sugar
6 Tbsp. butter, cubed
1 1/2 cups raisins
1 Tbsp. caraway seeds
2 egg
1 1/2 cups buttermilk

1. Heat the oven to 375 degrees. Grease a 9-inch round pan.
2. Combine the flour, baking powder, salt and baking soda. Mix in the caraway seeds and raisins.
3. Mix the buttermilk with 1 egg. Mix the remaining egg with 1 tsp. water (set aside).
4. Add the buttermilk to the dry ingredients. Mix just to blend. Turn onto a floured board. Knead 10 times. Place in the pan.
5. Brush the top with the egg wash. Cut an "X" in the top - not deep.
Bake 45 to 55 minutes. Cool.
