Guinness Corned Beef


Guinness Corned Beef

4 lb. corned beef
1 12 oz bottle Guinness Stout
1 large onion, cut in wedges
3 cloves garlic, minced
1 bay leaf
1/4 tsp. cinnamon
1/8 tsp. cloves
1/4 tsp. allspice
1/4 tsp. pepper
1 head cabbage, cut in wedges
6 medium potatoes, peeled & quartered
1 lb. carrots, peeled & cut in 3-inch pieces

1. Rinse corned beef and pat dry.
2. Place in large Dutch oven. Pour in Guinness and enough water to cover it.
Add onion, garlic and spices.
3. Bring to a boil. Skim off the foam. Reduce to a simmer.
Cover and simmer for 3 to 4 hours.
4. Add carrots and potatoes. Cover and cook about 30 minutes - until tender.
Add the cabbage. Cover and cook 20 minutes.

Serves 8.
