Downeast Maine Pumpkin Bread
1 can pumpkin puree
4 eggs
2/3 cups buttermilk
1 cup vegetable oil
1 Tbsp. vanilla extract
2 cups white sugar
1 cup brown sugar, packed
3 1/2 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
1 Tbsp. pumpkin pie spice
2 cups chopped nuts (optional)
1. Heat the oven to 350 degrees. Grease two 9 x 5 loaf pans.
2. Whisk together the dry ingredients. Set aside.
3. Mix together the pumpkin puree, eggs, buttermilk, oil and vanilla.
Blend well.
Add both sugars. Mix in.
4. Add the dry ingredients. Fold in the nuts, if using.
Pour into the pans.
Bake 60 minutes. Toothpick will come out clean.
Makes 2 loaves.
