Atlanta Pork Chops & Rice
4 good-sized boneless pork chops
2 Tbsp. oil
1/4 cup celery, sliced thin
2 (8 oz) cans tomato sauce
1 medium onion, chopped
1 1/2 cups water or chicken broth
2 Tbsp. brown sugar
1 tsp. salt
1/2 tsp. basil
1 cup uncooked rice
1. Brown the pork chops in the oil. Set them on a plate.
Add the celery and onion. Saute lightly. Drain.
2. Stir in the water, brown sugar, salt, basil and rice.
Add the pork chops.
Bring to a boil.
3. Simmer, uncovered for 30 minutes.
This recipe was in a pamphlet that I got from Hunt's back in the late 60's.
