Crock Pot Chicken & Dumplings
1 1/2 lbs. boneless chicken, cut in chunks
1 medium onion, diced
2 medium carrots, diced
2 stalks celery, chopped
2 cloves garlic, minced
4 cups chicken broth
1 can (10 oz) cream of chicken soup
3 Tbsp butter
1 tsp. thyme
1 tsp. salt
1/2 tsp. pepper
1 bay leaf
Dumplings
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
3/4 cups milk
3 Tbsp. melted butter
1. Place chicken, vegetables and butter in the crock pot.
Add broth, soup and seasonings. Stir.
Cover. Cook on low for 7 hours.
2. For the dumplings, whisk together the flour, baking powder and salt.
Stir in the milk and butter.
Drop by spoonfuls onto the soup.
Cover. Cook on high for 30 minutes.
Serve.
