Costco's Chocolate Muffins
3 1/2 cups flour
4 tsp. baking powder
1 tsp. baking soda
2 tsp. salt
1 1/2 cups cocoa, divided
1 cup hot water
2 cups sugar
2/3 cups oil
4 eggs + 1 egg yolk
4 tsp. vanilla
1 1/2 cups sour cream
2 1/2 cups chocolate chips, divided
1. Heat the oven to 375 degrees. Line or grease Texas-size muffin pans.
2. Whisk 1/2 cup cocoa with 1/2 cups hot water. Set aside.
3. Mix flour baking powder, baking soda and salt with 1 cup cocoa.
4. Whisk together the sugar, oil, eggs and vanilla.
Stir in the sour cream and the cocoa/water mix.
5. Add the dry ingredients. Stir just to combine.
Fold in 1 1/2 cups chocolate chips.
6. Fill the muffin cups 3/4th's full. Sprinkle remaining chocolate chips on top.
Bake 25 - 30 minutes. Toothpick will come out clean.
Cool in pan 10 minutes. Transfer to racks.
Makes 12 jumbo muffins
