Chicken Scampi
1 lb. chicken, cut in bite-size pieces*
8 oz. linguini, cooked & drained
4 Tbsp. butter
2 Tbsp. oil
5 cloves of garlic, minced
1 cup chicken broth
1 tsp. lemon juice
1 Tbsp. Italian seasoning
salt & pepper, to taste
Parmesan, for serving
1. Season the chicken with the salt, pepper and Italian seasoning.
In a skillet on medium-high, heat the oil.
Saute the chicken 7 minutes. Remove to plate.
2. Add butter to skillet. Saute garlic for 1 minute.
Pour in broth and lemon juice.
Simmer 2 to 3 minutes.
3. Add the chicken. Stir to coat.
Add the pasta. Toss to mix.
Serves with Parmesan.
*Substitute with shrimp.
