American Chop Suey
New England Style
1 lb. lean ground beef
1 medium onion, chopped
1 medium green pepper, chopped
minced garlic
salt & pepper, to taste
1 or 2 cans tomato soup
1 lb. elbow macaroni, cooked & drained
1. Brown the ground beef with the onion, green pepper and garlic.
Drain. Return to pan.
2. Add the salt and pepper.
Mix in 1 can tomato soup. Heat it on low.
3. Pour ground beef mixture into the macaroni. Add more tomato soup, if needed.
Adjust seasonings, if needed.
*This is the way my mother made it.
These days, I add cheese, corn and maybe some chili powder.
