Apple Pie Bread Pudding
16 cups bread cubes - preferably day old or stale
6 apples, peeled, cored & chopped
8 eggs
2 cups sour cream
2 cups milk
5 tsp. apple pie spice
1 cup + 2 Tbsp. brown sugar
Sauce
2 cups butter
2 cups heavy cream
2 cups brown sugar, packed
1. Heat the over to 350 degrees. Spray a large baking dish.
2. Whisk together the sour cream, milk, egg, spices and sugar.
3. Put the bread cubes in the baking dish.
Toss in the apples.
Pour on the milk mixture.
Make sure the bread is pressed down into the milk.
4. Bake for 1 hour. It'll be puffy and golden. A knife will come out clean.
5. Make the sauce: Put all the ingredients in a saucepan on medium heat.
Bring to a boil. Turn to low.
Simmer 5 minutes - until thickened.
6. Poke holes in the hot bread pudding.
Pour the sauce over the top.
Serves warm or chilled.
