Taco Casserole
1 lb. ground beef
1 onion, chopped
4 Tbsp. minced garlic
2 Tbsp. chili powder
1/2 tsp. oregano
1 tsp. salt
1/2 tsp. pepper
2 tsp. apple cider vinegar
1 tsp. brown sugar
2 cans Rotel
1 can refried beans
8 oz. (2 cups) shredded Cheddar
2 cups Fritos, divided
black olives, sliced
1. Heat the oven to 375 degrees. Spray a 9 x 13 pan.
2. In a skillet on medium heat, saute the ground beef with the onions. Drain.
Add garlic and seasonings. Cook 1 minutes.
3. Add the vinegar, brown sugar and 1 can Rotel. Stir.
4. In a bowl, mix refried beans and 1 can Rotel. Mix well. Spread in the pan.
5. Sprinkle with 1/2 cup cheese on top and 1 cup Fritos.
Spoon on the beef, 1/2 cup cheese and 1 cup Fritos.
Top with the remaining cheese.
Bake for 20 to 25 minutes.
Top with black olives.
Serves 8.
