Sweet Potato Pie
4 cups cooked, mashed sweet potatoes
2 cups sugar
1 cup brown sugar
1 cup butter, melted
4 eggs
1/2 cups milk
1 tsp. cinnamon
1 tsp. nutmeg
2 tsp. vanilla extract
2 unbaked 9 inch pie crusts
1. Heat the oven to 350 degrees. Set the pie pans on parchment lined baking sheets.
2. Mix the sweet potatoes with both sugars
3. Add butter, eggs, milk, spices and vanilla. Pour into pie crusts.
4. Bake for 55-60 minutes or until a knife inserted towards the center comes out clean. Cool. Refrigerate.
Makes 2 pies.
