Boston Brown Bread
1 cup raisins
1 cup boiling water
2 1/2 cups whole wheat flour
1/2 cups all-purpose flour
1 tsp. baking powder
1/2 cups sugar
1 tsp. salt
1 egg
2 cups buttermilk
1/2 cups molasses
2 1/2 tsp. baking soda
1. Pour boiling water over raisins. Soak 10 minutes.
2. Combine both flours, baking powder and salt. Add the egg.
3. Whisk together the buttermilk, molasses and baking soda. Mix into the dry ingredients. Drain the raisins and mix in.
4. Heat the oven to 350 degrees. Spray a 9 x 5 loaf pan. Bake for about 50 minutes - a toothpick will come out clean. Cool completely before slicing.
