Sour Cream Doughnuts
oil for frying
3 Tbsp. butter, room temperature
1/4 cups sugar
1/4 cups brown sugar, packed
2 egg yolks
1/2 tsp. vanilla
2/3 cups sour cream
2 cups + 2 Tbsp flour
2 tsp. baking powder
1 Tbsp cornstarch
1/2 tsp. salt
1/8 tsp. nutmeg (optional)
Glaze
1 1/2 cups powdered sugar
1/4 cups melted butter
1/2 tsp. vanilla
1 1/2 to 2 Tbsp. hot water
1. With hand mixer, combine the butter and both sugars. Add the eggs.
2. Add the vanilla and sour cream. Mix well.
3. Whisk together the flour, baking powder, cornstarch, salt and nutmeg.
With a wooden spoon mix the dry ingredients into the butter & sugar.
4. Cover with plastic wrap. Refrigerate for 1 hour.
5. Turn dough onto floured board. Roll out to 1/2-inch thick. Cut with a doughnut cutter.
Set them on a baking sheet and set in the refrigerator for 15 minutes.
6. Heat the oil to 360 degrees. Fry the doughnuts for 1 1/2 to 2 minutes on each side.
Drain on paper towels. Cool.
7. Mix the glaze ingredients. Dip the doughnuts in the glaze and set on a rack so the glaze will set.
Makes about 16 doughnuts.
