Oatmeal Scotchie Muffins


Oatmeal Scotchie Muffins

4 cups oatmeal
2 2/3 cups milk
1 1/2 cups packed brown sugar
1 cup butter, melted
4 eggs
2 tsp. vanilla extract
2 cups flour
3 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
2 cups butterscotch chips

1. Heat oven to 400 degrees. Line muffin pans or spray them.

2. In a large bowl combine oatmeal, milk and sugar. Let stand about 1 hour.

3. Add the butter, eggs and vanilla. Mix well.

4. Whisk the flour, baking powder, baking soda, salt and cinnamon. Add to the oatmeal mixture.
Fold in the butterscotch chips.

5. Spoon into pan - near full.

6. Bake 35 to 45 minutes. Toothpick will come out clean.
Cool in pan 10 minutes. Turn onto rack to cool completely.

Makes 12.
