Monica's Favorite Jumbo Brownies
2 lbs. butter
3 lbs. semi-sweet chocolate chips (48 oz)
12 oz. unsweetened chocolate
12 eggs
3 Tbsp. instant espresso
4 Tbsp. vanilla extract
5 cups sugar
5 cups flour
2 Tbsp. baking powder
2 tsp. salt
3 cups chopped nuts
1. Heat the oven to 350 degrees. Spray or line two 9 x 13 pans.
2. Melt the butter with 2 lbs. semi-sweet chocolate chips & unsweetened chocolate on low. Cool.
3. In a large bowl stir together (DO NOT BEAT!) the eggs coffeem vanilla & sugar.
Stir in the melted chocolate & butter. Cool to room temperature.
4. Whisk together 4 1/2 cups flour, baking powder and salt. Toss the remaining 1/2 cups flour with the 1 lb. chocolate chips.
5. Add flour to the chocolate mixture.
Stir in chocolate chips and nuts.
Pour into pans.*
6. Bake about 45 minutes. DO NOT OVERBAKE!
You want them somewhat jiggly in the center.
*Use 1 pan for big thick brownies or 2 pans for somewhat thinner ones.
