Meatloaf with Mushroom Gravy
2 lbs. lean ground beef or meatloaf mix
1 cup finely chopped onion
1 cup breadcrumbs
2 eggs
1 Tbsp. Worcestershire sauce
2 Tbsp. red wine
1 tsp. thyme
1/4 cups Parmesan cheese
1 tsp. salt
1/2 tsp. pepper
Gravy
3 Tbsp. butter
1/4 cups chopped onion
2 cloves garlic, minced
8 oz. mushrooms, sliced
1 tsp. Worcestershire sauce
1/4 cups flour
3 Tbsp. red wine
2 cups beef broth
salt & pepper, to taste
1. Heat the oven to 375 degrees. Spray a large loaf pan.
2. Mix all the meatloaf ingredients with your hands.
Press into the pan.
Bake 70 minutes.
Let rest 10 minutes before removing from pan and slicing.
3. Make the gravy: Melt the butter in a saucepan. Saute the onion for 2 to 4 minutes. Add the garlic. Cook 1 minute.
4. Add the mushrooms and Worcestershire sauce. Cook for 8 minutes.
5. Whisk in the flour and cook 3 to 4 minutes.
Add wine and beef broth. Simmer 5 minutes - until thickened.
