Jumbo Chocolate Cookies
1 package (11.5 oz) chocolate chunks, divided
1 cup flour
1/4 cups cocoa
1 tsp. baking soda
1/2 tsp. salt
1 stick butter, room temperature
1/2 cups packed brown sugar
1/4 cups white sugar
1 egg
1 tsp. vanilla extract
1. Heat oven to 325 degrees. Line cookie sheet with parchment paper.
2. Melt 2/3 cups chocolate chunks. Stir until smooth.
3. Beat butter and both sugars until creamy. Add the melted chocolate. Mix well.
Add egg and vanilla. Mix 1 minute.
4. Whisk together the flour, cocoa, baking soda and salt.
Add to the butter mixture.
Fold in the remaining chocolate chunks.
5. Drop by 1/4 cups measure onto the cookie sheet.
Bake 16 to 18 minutes - just until set.
Cool on pans for 5 minutes. Transfer to racks to cool completely.
Makes 1 dozen.
