Greek Pasta Salad
1 16 oz box rotini
1 medium sized cucumber
1 pint grape tomatoes, halved
1/2 small red onion, sliced very thin
1 cup black olives, sliced
1 green pepper, chopped
5 oz. feta cheese, crumbled
Dressing
1/2 cups olive oil
3 Tbsp. red wine vinegar
2 Tbsp. lemon juice
1 1/2 tsp. oregano
1 tsp. basil
1 1/2 tsp. minced garlic
2 tsp. honey
salt, to taste
1. Whisk together the dressing ingredients. Set aside.
2. Cook the rotini al dente. Drain. Cool.
3. Mix the vegetables in a large bowl. Add the rotini. Toss to mix.
4. Pour on the dressing. Toss.
Refrigerate.
