Angel Biscuits


Angel Biscuits

4 1/2 tsp. yeast
1/4 cups warm water (100 to 110 degrees)
5 cups flour
1/3 cups sugar
2 tsp. baking powder
1 tsp. baking soda
2 tsp. salt
1 1/4 cups cold butter, cubed
2 cups warm buttermilk
2 to 4 Tbsp, melted butter

1. Sprinkle yeast on the warm water. Let sit for 5 to 10 min. You want it to be foamy.

2. Whisk together the flour, sugar, baking powder, baking soda and salt.
Cut in the butter until it's like cornmeal.

3. Mix the yeast with the warm buttermilk. Stir to combine.
Mix this into the flour. It's a rough dough.

4. Turn onto a floured board and knead until smooth - about 10 minutes.

**You can now store this in the refrigerator for up to 1 week**

5. Roll the dough out to 1/2-inch thickness. Cut with a 3-inch biscuit cutter. 
Place on a parchment lined cookie sheet. 
Cover with a towel. Let rise 1 hour.

6. Heat the oven to 400 degrees. Brush the tops of the biscuits with the melted butter.
Bake for 13 to 15 minutes or until golden brown.
Brush with butter again when they come out of the oven.
