Four Layer Pecan Pie
1 9-inch pie crust, baked
8 oz. cream cheese, room temperature
1/2 cups sugar, divided
1 1/2 tsp. vanilla extract, divided
4 eggs
1 cup white corn syrup
1 1/4 cups chopped pecans
1. Heat the oven to 375 degrees.
2. Combine the cream cheese, 1/4 cups sugar, 1 tsp vanilla and 1 egg.
Beat on low until smooth.
3. In another bowl beat 3 eggs. Add 1/4 cups sugar, corn syrup and 1/2 tsp. vanilla. Mix well.
4. Spread the cream cheese mixture in the pie crust.
Sprinkle with the pecans.
Pour on the corn syrup mixture.
5. Bake for 40 - 45 minutes or until center is set.
Cool. Refrigerate.
Serves 6.
