Overnight Raised Doughnuts
3 cups bread flour
3 cups AP flour
1/3 tsp. nutmeg
1 1/2 tsp. Kosher salt
3 tsp. instant yeast
1 1/2 cups buttermilk
2 sticks + 2 Tbsp. butter
3 eggs, beaten
oil for frying
1. Whisk together the bread flour, AP flourm nutmeg, salt and yeast.
2. Heat the buttermilk and butter to 110 degrees.
Add it to the dry ingredients.
Fold in the eggs.
3. Turn onto a floured board. Knead for 8 minutes.
Dough should be smooth.
Shape into a ball. Put into a greased bowl.
Cover with plastic. Refrigerate overnight.
4. Remove from refrigerator. Punch it down.
On a floured board, roll to 1/2 inch thickness.
Cut out.
Lay on waxed paper on a cookie sheet.
5. Cover with plastic wrap. Let rise for 60 minutes.
**Heat the oven to 200 degrees. Turn it off and set the doughnuts in there to rise.**
6. Heat your oil to 350 degrees.
Fry the doughnuts for 1 to 2 minutes on each side.
You want them a golden brown.
Set on a rack to cool.
Once cool, dip into one of the dips or leave plain.
Plain Dip
1 cup powdered sugar
1/2 tsp. vanilla
4 - 5 Tbsp. milk
sprinkles
Chocolate Dip
1 1/2 cups powdered sugar
1/4 cups cocoa
1 Tbsp. white corn syrup
3 - 5 Tbsp. milk
sprinkles
Cinnamon-Sugar
1/2 cups sugar
1 tsp. cinnamon
