Chicken Scampi
1 lb. boneless chicken, cut into nuggets
8 oz. linguini or spaghetti, cooked & drained
4 Tbsp. butter
2 Tbsp. olive oil
5 cloves garlic, minced
1/2 cups chicken broth (or white wine)
1 tsp. lemon juice
1 Tbsp. Italian seasoning
salt & pepper, to taste
Parmesan
1. Season chicken with salt and pepper and Italian seasoning.
In skillet on med-high, heat the oil.
Sauteed chicken for 5 to 7 minutes. Remove to plate.
2. In same skillet, melt the butter.
Saute the garlic for 1 minute.
Add the broth and lemon juice. Simmer 2 to 3 minutes.
3. Add chicken. Toss to coat. Heat for 2 minutes.
Add the pasta. Stir to coat.
Serves with Parmesan.
